At D.T.Waller & Sons, we know our suppliers personally and how their produce is reared and cared for. So we - and you - always know where it came from.
All our meat comes from these specially - selected local farms, where the animals are allowed to range freely.
Matured beef is properly hung for 21 days or more, to give it natural taste and tenderness. This allows time for the water content to reduce, the flavour develop and texture to improve.
So, when you cook it, it is more tender & looks more appetising on the plate.
(By contrast, standard pre-packed meat which you can buy from some supermarkets could be from anywhere. The conditions in which it was reared, prepared and packed are not usually specified. Then, to give it shelf life, it is boned, cut and put on display so quickly that the texture and flavour cannot develop. Also, the high water content you are paying for means that the meat cooks differently, causing it to 'boil' from inside, instead of heating through properly.)
